Because wolves are cooler? Actually, the title itself, "ōkami" is a pun. "ōkami" means "wolf" in Japanese (i'm sure you know this already), but, the kanji used for the title "Ōkami" means "great deity." Also, Amaterasu's full name is "Amaterasu Omikami" take out the "mi" and what do you get? "Okami"! Also of note is Ammy's first weapon, the mirror. In the shrine to Amaterasu, the Ise Shrine located in Ise, Mie perfecture, Japan, Amaterasu is represented by a large mirror.

I don't believe the cat, god of walls, is a true god within Japanese culture. It was just thrown into the game. The brush gods being the animals of the Chinese Zodiac, in addition to the cat. Umm... like how there's a cat in Fruits Basket, even though there's no cat in the zodiac.
